Chouquettes Making Workshop in Paris
We invite you to take part in an authentic and gourmet workshop dedicated to making chouquettes, an iconic specialty of French pastry.
This experience will introduce you to one of the essential foundations of French baking: pâte à choux (choux pastry).
Chouquettes, small and airy pastries topped with pearl sugar, are now a staple in French bakeries.
However, their history is closely linked to the royal traditions of French pastry.
A royal and European history
The origins of choux pastry date back to the 16th century, when the Italian pastry chef Pantarelli, working for Queen Catherine de’ Medici, created its first version.
In the 18th century, French pastry chef Jean Avice refined the recipe.
Later, the renowned Marie-Antoine Carême, known as “the chef of kings,” gave it its classic form and established it as a cornerstone of French haute pâtisserie throughout Europe.
This pastry became the base for some of the most famous French desserts:
éclairs, Paris-Brest, profiteroles, and of course, chouquettes.
